Cork Chilli Company is based in Douglas, Cork. We grow and sell premium quality chillies.  From our chillies we make chilli sauces and other chilli based products, and we also sell chilli plants

How we grow our Chillies

“We have been growing chillies in Cork since 2013. We have two growing facilities, one in Douglas and one in Rochestown. We typically grow 30 to 40 chilli varieties each year

All our chillies are grown hydroponically. That means no soil. The plants are grown in channels or pipes with their roots suspended in a continuously pumped water-based solution.

There are significant benefits to growing hydroponically, including zero water wastage (great for the environment!) and precise control of the growing environment, including pH and plant nutrients. This leads to stronger healthier plants, and superior fruit quality and yield.

Growing hydroponically also eliminates the risk of soil-borne pests and diseases, which significantly reduces the need for pest and disease control. If we do get any pests we use natural methods of control such as the ladybird you see in this picture.”

How We Cook

All of our chilli sauces are small-batch, gluten-free, vegan-friendly, free from artificial colours, flavours, preservatives, and thickeners, and all are home-made in our HSE approved kitchen.

We do not take shortcuts with our ingredients. All are fresh. We do not use concentrates or pastes. We peel all our own fresh garlic and ginger. We squeeze our own lemons, limes and oranges, chop our own pineapples, use fresh tomatoes and herbs.

Supporting Local Charity

Every year we run the annual Cork Chilli Company Chilli Eating Competition in aid of St.Vincent De Paul. Take a look at last years competition to see some competitors eat some extremely hot chillies all for a good cause.

In 2017 our ‘Totally Tropical’ chilli sauce was selected as a finalist in the Blas na hÉireann Irish Food Awards. In 2019 both our ‘Blazing Cayenne’ and ‘Habanero Inferno – Extra Hot’ chilli sauces won Great Taste awards.

About our Blazing Cayenne sauce, the judges said: 

“Fabulous fiery red colour with an amazing tomato aroma…good flavour of tomato and ginger with a little garlic on the finish…A great little sauce…There is a freshness and lightness of approach thatis applauded.”

And about our Habanero Inferno – Extra Hot sauce, the judges said: 

“A grand lava hue to this chilli sauce with full-on fruit on the nose. There is a grand heat balance…a good honest hot sauce and Great intensity to this product and there is a lovely vibrancy and depth alongside the chilli heat. A powerful one, but well rounded. A little goes a long way…great as a base ingredient for cooking”
